This is really a simple dish that uses all your left over vegetables. The only specific ingredients you reall need are a tin of coconut milk, frsn chillies after that add anything you have: Lemon grass, coriander, Cumin, Cayenne pepper, cloves, lime leaves or just curry powder!
Take your veg: peeled and chopped potato, brocolli stalks, caulyflower florets, aubergine, courgette, leek, onion, garlic — anything you like! Par boil the potatoes, strain place in a pan with some vegetable oil, blitz the herbs, chilli etc — sweat down all the veg, add the coconut cream and reduce until thick. Serve with Basmati or Sticky rice!
