Ingredients

500 gms of trimmed turkey meat

Whole onion chopped

1 Clove of garlic finely chopped

1 Red pepper deseeded and cut into strips

1 Green pepper deseeded and cut into strips

10 mushrooms, washed and sliced

1 Glass of white wine (you know what to do with the rest!)

200 ml turkey stock

150 ml Cream

Salt and freshly ground black pepper

A good pinch of saffron

 

Step by Step Instructions

Step 1

Hopefully you have already made some turkey stock from the carcass

Chop the cold turkey into bite size pieces.

Step 3

Add the cream and saffron and reduce until thickened. If necessary add a little cornflour mix to aid thickening.

Adjust seasoning to taste

Step 2

In a pan sautée the onions, garlic and peppers until soft. Add the turkey and mushrooms and the white wine. Cook for one minute.

Add the stock and simmer for 5 minutes. Season well with salt and black pepper

Step 4

Serve with boiled long grain rice.
