I don’t often buy frozen fish, but I remembered that Mercadona do a frozen fillet of wild salmon. This piece is enough for two people. In a fry pan put a little olive oil and butter. When hot place the two pieces skin down add some chopped chives (I use the green tales of the white onions) and season with salt and pepper. After a minute cover for a further minute. Remove and place fillets on pre-prepared cream potato. Squeeze the juice of half a lemon in the pan, add some white wine and reduce. Turn off heat and whisk in a knob of butter and serve. Add veg to choice.
