This was a sort of hit and miss attempt at Spicy Chicken which worked well. In a blender, chopped onion, garlic, chillies, cloves, a little green pepper, lemon grass, ginger, coriander, cumin seeds, cardamom small tomato and blitz. Pan fry chicken breast (skin down) for 3 – 4 minutes add mixture, turnover the chicken and cover for 4 mins on a medium heat. Remove the chicken and place under a grill skin up (to crisp) Add some tinned tomatoes some brown sugar, turmeric and reduce. Adjust seasoning Serve with basmati rice, place chicken on top and sauce on top to one side. Dollop of yoghurt!
