Easy, tasty and economic!! Cut two rings from an apple, leave the peel on. Cut two pieces of fillet of pork to about the same size. In a pan, put some butter and a drop of olive oil; add a little chopped onion and place the apples in the pan. Sprinkle a little brown sugar over one side of the apple and turn. Put the two fillets of pork in the pan, seal both sides and cook for three minutes either side. Flame in Calvados (if you have) or Brandy, add some chicken stock and a teaspoon of pink peppercorns. Remove pork and rest. On a plate place the apple slices with the pork on top. Add a little cream to the mixture and pour around the meat and a drizzle over the top.  I served mine with ‘Bubble and Squeak’ and Broccoli.
