Garlic and Parsley Turkey Breast
Garlic and Parsley Breaded Turkey Breast with Brown Pasta
4 medium sliced fillets of turkey breast
wholemeal pasta (quantity to choice)
1 Large lemon
6 cherry tomatoes
grated parmesan (or similar hard cheese)
olive oil, salt and freshly ground black pepper
FOR THE CRUMB
Fine bread crumbs
4 cloves of garlic
packet of parsley finely chopped
Step by Step Instructions
Put on a pan of salted water to boil. Add a dribble of olive oil to prevent sticking
When boiling add required amount of brown pasta
In a frying pan put sufficient olive oil to cover the base.
When hot, place all the fillets in at the same time.
Cook for two minutes either side. Set aside.
whisk and egg with a little milk
Finely chop the garlic and mix with finely chopped parsley and breadcrumbs, the zest of the lemon and season with salt and pepper
Flour the turkey fillets, dip into the egg wash and coat with the bread crumbs. set aside.
Drain and rinse the pasta with hot water.
Cut tomatoes in halves add to the pasta with a good glug of olive oil and place at the bottom of a bowl
Place the fillets on top of the pasta, squeeze the juice of the lemon over and sprinkle the grated cheese over the top and add a little more olive oil.
