Now I am not going Vegan, I’ll just put that out there. Neither am I a vegetarian although I am happy to eat a vegetarian dish as long as the food is fresh, well prepared and tasty. So for fun I decided to make myself a Buddah Bowl. For the uninitiated a Buddah Bowl is just a lot of your favourite raw foods chucked in a bowl with your favourite seasonings and interesting dressings. The great thing about this dish is that it needs no recipe; Just creativity and enthusiasm.

Ingredients

Avocado
Spring Onions
Cherry Tomatoes
Bean Sprouts
Cucumber in strips
Cooked Brown Rice
Shredded Red Pepper
Florets of Steamed Broccoli
Shredded red Cabbage
Shredded Carrot
Wilted Pak Choi
For the sauce
2 table spoons of Smooth Peanut Butter
2 cloves garlic
Chopped Fresh Ginger
2 small hot Chillis
Ketchup Manis
Juice of fresh lime
Salt and Black Pepper
Step by Step Instructions
Step 1
Prepare all the vegetables. Steam the broccoli and Pak Choi and set aside.
Step 3
Place all the ingredients individually in a bowl and cover with the dressing. Or alternatively place in a large mixing bowl, pour over the dressing and mix in thoroughly and serve in two bowls
Step 2
To make the sauce, place all the ingredients into a blender. Add water as you blend until you have an emulsion
