I use brown (integral/wholemeal) spaghetti for this dish

This is a great lunchtime dish: I tend to avoid pasta at night.

Ingredients

Chicken carcass with as much meat taken off as possible.

½ Leek

2 Carrots

2 Potatoes

Any other veg out of the fridge that has raised the white flag!

Bay Leaves

Peppercorns

Stock Cube

 

Step by Step Instructions

Step 1

Place chicken in a large pan of water and bring to the boil.

Chop all the vegetables into bite size pieces

 

 

Step 3

Take as much meat off the boiled carcass as possible and put back into the stock.

Simmer for 10 mins and serve.

 

Step 2

After 20/30 mins remove the carcass from the pan and put aside.

In the stock add all the veg, the stock cube, bay leaves and 6 peppercorns and the chicken meat you have removed.

Bring to the boil.
