My recent visit to Nestor’s in Guadalmina, where I chose one of my favourite dishes, Steak Tartare, has prompted me to divulge my recipe for this iconic dish. Over many years I have perfected this and served it to actors and pop stars that have loved it as well as my regular clients in my numerous restaurants.

Ingredients

  • 200 gms Fillet steak VERY finely chopped1 shallot peeled and finely chopped

    1 medium size gherkin finely chopped

    1 dessert spoon of finely chopped capers

    1 small clove of garlic finely minced

    1 dessert spoon of brown French mustard

    1 Teaspoon of tomato purée

    Olive Oil

    Tabasco

    White Wine vinegar

    Worcestershire sauce

    Dessertspoon of brandy

    2 tablespoons of red wine

    1 Egg yolk

    Salt and Black pepper

Step by Step Instructions

Step 1

In a glass bowl, put a table spoon of olive oil and a teaspoon of white wine vinegar with the brown French mustard, tomato purée and mix together. Add the garlic, shallot, gherkins and capers and mix well. Add a couple of drops of Tabasco (or more if you like it spicy) and the Worcestershire sauce.

Step 3

Put in the finely chopped beef and mix thoroughly until well coated with the mixture. Add the brandy and red wine and season with salt and freshly ground black pepper to taste. When satisfied with the seasoning add the egg yolk and mix thoroughly.

Arrange the mixture on a plate in ‘hamburger’ style.

Serve with finely cut ‘French Fries’ or thin crisp toast and a green salad

If you are preparing for four people do it in two bowls at the same time.
